These tasty muffins are easy to make, it takes only about 40 minutes (including the time in oven). You can, of course, use ground flaxseed in all kind of muffins by adding 1/2- 3/4 dl ground flax seed to the dough of muffins.

150 g butter
1,5 dl sugar
2 eggs
3/4 dl ground flaxseed
1 dl cream/ milk
1 dl flakes of coco palm
2 dl wheat flours
1,5 tsp baking powder
2 tsp vanilla sugar

Cream together the butter and sugar until fluffy. Add the eggs one at a time, beating well with each addition. Then stirr in ground flax seed, cream and flakes of coco palm. Combine the flours, baking powder and vanilla sugar, gradually stir into the creamed mixture. Drop by spoon onto baking cake tins. Bake in 200 degrees for about 15 minutes.
