These cookies are easy to make because you don't need to roll them - you can straightly put small lumps in baking sheet. These cookies are pretty sugary so you can reduce the amount of sugar if you wish.
200 g butter
2 dl sugar
2 eggs
1 dl ground flax seed
1/2 dl chocolate chips
2 teaspoons vanilla sugar
2 teaspoons baking powder
2 1/2 dl wheat flour
1 dl potatoflour
Cream together the butter and sugar until fluffy. Add the eggs one at a time, beating well with each addition. Then stirr in ground flax seed and chocolate chips. Combine the flours, baking powder and vanilla sugar, gradually stir into the creamed mixture. Drop by spoon onto baking sheet, give lots of space to expand. Bake in 200 degrees for about 8 to 10 minutes.
